Igazi magyaros, szaftos őszi egytálétel: a klasszikus paprikás burgonyát krémes fehérbabbal és roppanós füstölt kolbásszal tesszük még laktatóbbá és tartalmasabbá.

Preparation method

Preparation

1

Peel, wash, and cut the potatoes into approximately 2.5–3 cm cubes. Slice the smoked sausage into about 0.5 cm rounds, and finely dice the Kolozsvári bacon. Finely chop the onion and crush the garlic. Core and slice the wax pepper, and finely dice the tomato. Rinse the canned white beans in a colander under running water, then drain thoroughly.

Cooking and assembly

1

In a large pot over medium heat, render the diced Kolozsvári bacon together with the lard until the bacon bits turn nicely crispy and release their fat. Add the sliced smoked sausage and fry for 2–3 minutes until lightly browned and fragrant, then transfer the sausage slices and crispy bacon bits to a small bowl.

2

In the remaining hot fat, sauté the finely chopped onion until translucent, about 4–5 minutes. Stir in the chopped wax pepper, tomato, and crushed garlic, then sauté for another 2–3 minutes until you get a juicy stew base.

Chef's tip

Thanks to the starch content of the potatoes, the sauce naturally thickens itself: if you crush a few potato cubes against the side of the pot with a wooden spoon towards the end of cooking, you can achieve a thicker and creamier consistency without making a roux.

Be careful when adding salt due to the saltiness of the smoked bacon and sausage; it is best to adjust the seasoning only at the end of cooking, after simmering with the white beans and sausage.
