Thoroughly clean and wash the rooster, then place it in a large pot and pour enough water over it to completely cover it. Bring to a boil, then reduce the heat and skim off any foam that forms on top.
Lightly salt it, add the whole black peppercorns, allspice, and bay leaves. Simmer gently over low heat until the meat is half-cooked. This process may take longer depending on the age of the rooster.
Add the cleaned carrots, parsley root, celeriac, and whole red onion (you can leave the outer skin on for a nice color). Continue to cook over low heat until all ingredients are completely tender.
