Large-sized pomegranate

Deep burgundy-colored fruit is the pomegranate, whose small seeds are consumed. It has a high antioxidant content and contains a large amount of vitamin C. Its characteristic sour and sweet taste can be an excellent refreshment for the summer months. You can make a healthy breakfast out of it by mixing it into yogurt.

ROASTED CHICKEN WITH POMEGRANATE SAUCE

Ingredients

• 1.5 kg chicken
• salt
• pepper
• butter
• oil
• 1 can of peach preserves
• 4 dl water
• 1 dl pomegranate juice
• 0.5t k ground cinnamon
• 1 pc pomegranate
• sugar
• salt
• 2 tbsp butter
• 1 tbsp flour
• 1.5 kg chicken leg

Preparation

1. Cook the chicken or the legs in the chicken stock, then take it out, cut it into pieces, salt it, pepper it, and fry it until crispy in the heated butter and oil mixture.
2. Cut the pomegranate in half, take out its seeds. Brew tea with the filters and cinnamon, cool it down, add the pressed juice of 1/2 pomegranate, and sweeten it with sugar.
3. Heat up the butter in the pot, sprinkle the flour into it, and make a light roux, pour the pomegranate juice on it and thicken it to the consistency of a sauce. You can further flavor it with ground cinnamon, sugar, pomegranate syrup.
4. When serving, cut the chicken breast into pieces, cut the peach into smaller cubes. Pour the sauce onto a plate, sprinkle it with the remaining seeds, or serve it in a sauce cup. It is delicious, can be consumed cold in the summer, or warm in cooler weather.

Storage

Store in a dry, cool place, between 10-12 °C.
