Ingredients for 2 people:

  • 300 g Friggitello della Fiumara dell'Ippari,
  • 1 clove of crushed garlic,
  • extra virgin olive oil,
  • salt.

Wash them, leave them whole and with the stem. In a fairly large non-stick pan, heat the extra virgin olive oil and brown the crushed garlic. Add the friggitelli over low heat, salt and toss often, cover with a transparent lid and cook until wilted, remove the garlic and serve.

The Fiumara dell'Ippari river is the place where this particular ecotype of sweet pepper was born, where since the last century farmers have selected the best yielding plants to reproduce the seed for the following season. A  local ancient variety of pepper, which is skilfully reproduced and handed down from generation to generation; for this reason it has the flavor of time. The fiumara is a fertile area where the riverbed widens before flowing into the Scoglitti sea, the seaside village of the nearby city of Vittoria, in south-eastern Sicily. Its cultivation is strictly linked to this territory and to this ancient local ecotype, which is why it is an exclusive product typical of this area.
