Grikios Halloumi-type cheese with a spicy chili flavour. When exposed to high temperatures, its surface lightly browns and crisps, while the inside becomes springy. Cut the cheese into thick slices, approximately 1.5 cm. Fry or grill both sides in a pan for about 3-4 minutes, or bake in an oven for about 4 minutes at 150-200°C. It is best served warm.
