Ingredients
For 6 servings:

• 6 tablespoons of coconut milk
• 200 g mascarpone
• 250 g low-fat curd cheese
• 4 tablespoons of raw cane sugar
• 1 tablespoon of coconut chips
• 150 g whipped cream
• 1 can of pineapple chunks (200 g)
• 12 spelt ladyfingers
• 1 teaspoon of cocoa powder (reduced-fat)

Preparation

1. Make the coconut cream - Pour the coconut milk into a small saucepan and heat over low heat for approx. 2–4 minutes until the solid parts of the coconut milk also become liquid. Then mix with the mascarpone and curd cheese, and stir in the sugar and coconut chips. Whip the cream until stiff and fold it into the coconut mixture.
2. Assemble the dessert and chill - Drain the pineapple, reserving the juice. Break the ladyfingers into large pieces, place them in a dessert dish, and soak them with the pineapple juice. Place the pineapple chunks on top of the ladyfingers. Spread the mascarpone cream over the top and let it chill for about 1 hour. Serve dusted with cocoa powder.
