Description
Pálpusztai cheese is a soft, fatty cheese made from cow's milk, salted, rennet-coagulated, ripened with smear flora.
Pálpusztai cheese is famous for its characteristically strong, piquant, slightly ammoniacal bouquet, which is characteristic of all smear-ripened cheeses. The cheese dough is soft, with at most a few small fermentation or curd holes. It is characterized by its small size and weight, and short ripening time, and it ripens from the outside in. Its flavor develops during ripening, and it may become runny during storage. Its shape is usually a block or cube.
Pálpusztai cheese is one of the few traditional Hungarian cheeses, although its history does not go back too far. In Hungary, Pálpusztai cheese has been produced since the beginning of the 20th century, based on the model of beer snack (romadur) cheeses.
