- 1 kg pork ribs or spare ribs
- 300 g pineapple
- 1 pc red onion
- 7 g garlic
- 600 ml tomato puree
- 10 ml soy sauce
- 10 ml Worcestershire sauce
- 10 ml apple cider vinegar
- 5 g smoked paprika
- 5 g salt
- 5 g freshly ground mixed peppercorns
Steps
- 1Lightly toast the pineapple until its surface caramelizes, but be careful not to burn it.
- 2Add the finely chopped red onion, sauté them together for a few minutes, then add the tomato sauce and spices.
- 3Mix thoroughly, bring to a boil, then finally add the apple cider vinegar. Blend the resulting mixture and marinate the meat in it.
