Ingredients

  • 1 kg pork ribs or spare ribs
  • 300 g pineapple
  • 1 pc red onion
  • 7 g garlic
  • 600 ml tomato puree
  • 10 ml soy sauce
  • 10 ml Worcestershire sauce
  • 10 ml apple cider vinegar
  • 5 g smoked paprika
  • 5 g salt
  • 5 g freshly ground mixed peppercorns

    Lightly toast the pineapple until its surface caramelizes, but be careful not to burn it.

    Add the finely chopped red onion, sauté them together for a few minutes, then add the tomato sauce and spices.

    Mix thoroughly, bring to a boil, then finally add the apple cider vinegar. Blend the resulting mixture and marinate the meat in it.

    The sauce can also be cooked for a long time at a low temperature to achieve a creamy, thick consistency.
