Preparation method
Preheat the oven to 160 °C.
Season the meat thoroughly on all sides with salt, then tie it with kitchen twine to help it retain its shape during roasting.
Cut the fennel lengthwise into quarters. Finely grate the zest of the washed orange (only the orange part), then peel the orange and separate it into segments. Slice the garlic thinly.
Chef's tip
Use an oven-safe dish with a lid. Mashed potatoes or steamed rice make excellent side dishes.
