Preparation method
Clean the pork tenderloin of any excess fat and membranes, then cut it into approximately 4 cm cubes. Place the meat cubes in a large, sealable freezer bag or a bowl.
In a small bowl, mix all the spices (cumin, coriander, paprika, turmeric, oregano, pepper, cinnamon, salt), olive oil, and lemon juice. Add the crushed garlic as well.
Pour the marinade over the meat, seal the bag (or cover the bowl), and mix thoroughly so that the spiced mixture coats all the meat. Marinate in the refrigerator overnight, or for at least 2 hours.
