Ingredients
- 4 pcs eggs
- 20 g butter
- 50 g walnuts or sunflower seeds
- 150 g butter or margarine
- 10 g fine wheat flour
- 80 g powdered sugar
- 5 g lemon zest
- 60 g flour
- 50 g whole wheat flour
- 3 g phosphate-free baking powder
- 30 g sour cherries or other berries
Steps
- 1Separate the eggs and beat the whites until stiff peaks form.
- 2Cream the butter or margarine with a kitchen robot, then mix with the sugar, lemon zest, a pinch of salt, and the egg yolks added one by one, mixing for 1 minute after each addition.
- 3Sift the flour with the baking powder and incorporate it into the butter mixture in 2-3 batches.
- 4Finally, gently fold in the beaten egg whites.
- 5Toss the fruit with 1 tablespoon of flour to prevent it from sinking into the batter.
- 6Grease a medium-sized baking tray with butter and dust with flour, then spread the batter evenly.
- 7Distribute the fruit evenly over the batter and sprinkle the top with walnuts.
- 8Preheat the oven to 200 degrees Celsius, then place the tray in the oven, reduce the temperature to 180 degrees Celsius, and bake the cake for 20-25 minutes. Check with a skewer to see if the dough is fully baked.
- 9When ready, remove from the oven and let it cool slightly, then slice and serve.
