Recipe suggestion: Tomato and Basil Stuffed Eggplant

• preparation time: 35 minutes
• 2 servings

Ingredients

• 2 eggplants
• 80g mushrooms
• 2-3 cherry tomatoes
• 60g couscous
• herbs of your choice
• 2-3 tablespoons NOA tomato and basil cream

Preparation

1. Wash the eggplants and cut them in half lengthwise.
2. Using a spoon, create a small cavity in the eggplants and cut the removed pulp into small pieces.
3. Cover the couscous with hot water in a bowl and let it soak for approx. 5 minutes.
4. Mix the eggplant pieces and the chopped ingredients with the couscous.
5. Season with salt and pepper, and refill the eggplant halves.
6. Bake in the oven at 200°C top/bottom heat for approx. 20 minutes.
