INGREDIENTS

  • 4 good quality sourdough buns, rolls, or ciabatta
  • 2 tablespoons mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon mustard
  • 1 head of lettuce
  • 2 nice tomatoes (approx. 200 g)
  • 2 pieces pickled gherkins
  • Mixed fresh herbs (e.g., dill, chives, parsley)
  • 1 shallot
  • 4 farm eggs

PREPARATION

    For the sauce, mix together the finely chopped shallots, pickled gherkins, a little dill and chives, ketchup, mayonnaise, and mustard.

    Slice the tomatoes into finger-thick pieces, season with salt and pepper.

    Shred the lettuce.

    Cut the buns in half and toast them.

    Fry the eggs sunny-side up.

    Serve the sandwich with the freshly fried warm eggs.
Tip
You can also fry sliced bacon and add it. The sauce is also a perfect choice for hamburgers and can be stored in the refrigerator for a few days. If you don't have buns, this breakfast is also perfect between two slices of sourdough toast.
