Serving Suggestion - Rosemary Pork Loin with Shallot Apple Compote

• Ingredients for 4 servings: 4 tablespoons honey, 3 tablespoons salt, 2 sprigs rosemary, 10 whole peppercorns, 1 bay leaf, 2 cloves garlic, 1 kg pork loin, oil for frying.
• For the compote: Rege apple or pear compote, 2 shallots, 1 dl orange juice, 2 tablespoons apple cider vinegar, 1 tablespoon mustard, 2 teaspoons freshly chopped rosemary, 0.5 tablespoon brown sugar, 1 teaspoon salt, 20 dkg apple or pear compote.

Preparation

1. Heat the water over low heat, then mix in the honey and salt.
2. Remove from heat, add the rosemary, peppercorns, bay leaf, and crushed garlic, then set aside to cool.
3. After about 20 minutes, add the meat, then pour in enough water to cover it, and refrigerate for 1 night.
4. Preheat the oven to 180°C. Remove the meat from the marinade, drain it and pat it dry, then sear it in a pan with a little oil. After that, place it in a baking dish in the oven, bake for another 20 minutes, then set aside to cool.
5. Put 2 tablespoons of the fat collected under the meat into a pan, sauté the finely chopped shallots for a few minutes, then add the orange juice and vinegar, add the mustard, rosemary, sugar, and salt, and bring to a boil.
6. Finally, add the apple compote, heat it through, and spoon it next to the sliced meat when serving.
