Ingredients
- 500 g ground beef
- 130 g zucchini
- 130 g carrot
- 100 g onion
- 10 g fresh parsley
- 80 g long-grain rice
- 100 ml water
- 1 teaspoon dried oregano
- 1 pinch salt
- 1 pinch black pepper
Instructions
- 1Preheat the oven to 195–200 °C and prepare a baking dish approximately 25 cm × 35 cm.
- 2In a large bowl, combine the ground beef, finely grated zucchini and carrots, chopped onion, rice, salt, pepper, chopped parsley, and oregano. Knead the mixture thoroughly, then shape it into a loaf approximately 25 cm long.
- 3Place the meatloaf in the prepared baking dish and pour water around it. Bake in the preheated oven for 55–60 minutes, until golden brown and juicy.
- 4After baking, remove from the oven, let it rest for a few minutes, then slice and serve.
Tip
Serve with a fresh salad or mashed potatoes for a complete gastronomic experience.
