The beef shoulder blade is a moderately fatty part of the meat, so the strips made from it can be quickly fried, but they do not dry out even during longer cooking. Perfect choice for stroganoff or a quick dinner/lunch stir-fried with vegetables in a wok.

Kathi Food Ltd. deals exclusively with the processing and sale of beef cattle, including Hungarian Tarka heifers. We chose this breed because of its strengths: it has excellent slaughter value and its meat quality (marbled, tender) can compete with that of large beef breeds. The Hungarian Tarka breed is so to speak at home here, so it adapts very well to local conditions. We slaughter the heifers at a specific age, which is also decisive for the quality of the beef. The meat of a young heifer cannot be compared to that of an old dairy cow. Heifer meat is easy to prepare and has a much richer flavour. The chef will also have more success in the kitchen, as it is difficult to prepare badly. You can safely experiment with heifer meat.
