Preparation
Rinse the rice thoroughly. Then place it in a pot with cold water (in a 1:1 ratio of water to rice) and bring to a boil. Cook over low heat for 15–20 minutes. Season with salt to taste. After cooking, remove the pot from the heat and let the rice rest for about 5 minutes. Drain any excess water and use the rice as a base for sushi.
