What is Dijon mustard?

The most famous French mustard, which originated when mustard maker Jean Naigeon began maturing mustard in unfermented grape juice instead of vinegar in 1752. This is how the characteristic flavour of the still popular Dijon mustard was born. In 1937, during a highly publicised court case in which two Parisian and two Dijon mustard makers clashed over the use of the word Dijon, the court ruled that the Dijon designation was not tied to a geographical location, but to a recipe.
