For the vinaigrette, put the mustard, vinegar, a pinch of salt and pepper into a deep glass, add the oil, and using an immersion blender, slowly pull it up from the bottom until you get a smooth, creamy dressing.
If necessary, wash and dry the lettuces.
Cut the tomatoes into wedges.
Chef's tip
The vinaigrette is perfect for any salad. You can use Dijon or whole grain mustard. You can add any vegetables to the salad, such as cucumber, beetroot, endive, etc. The salad can also be made with leftover roasted meat or soft-boiled eggs.
