INGREDIENTS
- 25 dkg mixed lettuce
- 2 carrots
- A few stalks of spring onion
- 20 dkg cherry tomatoes
- 10 dkg arugula
- 10 dkg blanched green peas
- 1 dl extra virgin olive oil
- 1 spoon mustard
- 1 spoon white wine vinegar
- Salt
- Pepper
INSTRUCTIONS
- 1For the vinaigrette, put the mustard, vinegar, a pinch of salt and pepper into a deep glass, add the oil, and using an immersion blender, slowly pull it up from the bottom until you get a smooth, creamy dressing.
- 2If necessary, wash and dry the lettuces.
- 3Cut the tomatoes into wedges.
- 4Cut the carrots into strips.
- 5Mix the fresh vegetables and serve with the vinaigrette.
Tip
The vinaigrette is perfect for any salad. You can use Dijon or whole grain mustard. You can add any vegetables to the salad, such as cucumber, beetroot, endive, etc. The salad can also be made with leftover roasted meat or soft-boiled eggs.
