Ingredients
- 3 pcs eggs
- 220 g granulated sugar
- 300 ml sour cream (min. 20% fat)
- 50 g grated lemon zest
- 7 g baking powder
- 300 g flour
- 15 g butter
- 600 g fresh, crisp cherries
Steps
- 1Whisk the eggs thoroughly with the sugar until frothy (don't skimp on time, as this will make the finished cake beautifully tall and airy).
- 2To the egg-sugar mixture, add the sour cream and grated lemon zest, then gradually fold in the flour mixed with baking powder. For this mixing, do not use an electric whisk; just fold it together with a spoon.
- 3Pour the prepared mixture into a baking tray lined with baking paper, generously top with pitted cherries (or any fruit you desire), and bake in a preheated oven at 175°C on convection mode for 35-40 minutes.
- 4As soon as you take the finished cake out, immediately brush its top with melted butter and let it cool.
- 5During baking, place a heat-resistant bowl filled with water at the bottom of the oven to create steam.
- 6Baking time may vary by oven; perform a skewer test. You can also make the pie with other berries.
