Perlinetta - mini eggplant
Special, elongated mini sweet eggplant, which was first grown more than 20 years ago in the Ragusa province in south-eastern Sicily, in the town of Comiso. Its cultivation is closely linked to this territory and its community, which makes it unique. It has a moderately sweet taste, an edible skin, it is tender, not bitter, so it does not require pre-cooking salting. It is the result of a long process of natural selection and careful development of the most efficient cultivation techniques, in compliance with the highest levels of environmental sustainability. It is grown in greenhouses from autumn to winter, and in the shade, on soil and in open fields in spring and summer in the municipalities of Comiso, Vittoria and Santa Croce Camerina.

It is grown all year round, harvested by hand, delivered to the packaging plant within 4 hours of harvesting, checked and evaluated upon receipt, and processed by hand, with care, in packaging made of recycled material (Rpet) or that can be easily recycled. Wash the mini eggplants well, dry them, slice them diagonally! Put them in a greased baking dish, add a few cloves of crushed garlic and a little rosemary. Season with salt, mix well, heat the oven to 190 degrees and bake for 10-15 minutes!
