Horváth Rozi Sodium Benzoate

Preservative for canning, can be used instead of salicylic acid, recommended for preserving pickles and compotes.

Horseradish Apple Jam 
Preparation: easy
Cost: inexpensive

Ingredients:

• 1 kg apples
• 100 g freshly grated horseradish
• 150 g granulated sugar
• 1 tsp salt
•  0.5 dl sodium benzoate solution

Preparation:

• Peel the apples, remove the core, and cut them into smaller cubes.
• Add the grated horseradish, granulated sugar, and salt.
• Cook covered for about one to one and a half hours over low heat until the apples break down and become opaque.
• Then add the sodium benzoate solution, and pour the jam into sterile jars.
• It can be served with boiled and roasted meats, fresh and aged cheeses. 

Tip: This recipe also works well with pears, fresh ginger, or quince.

Storage

Store in a dry, cool place.

Suggested use

1 sachet is sufficient for 10 liters of pickling or compote liquid. Dissolve the contents of the sachet in 0.5 liters of hot water; 0.5 dl of this solution contains the necessary amount of preservative for 1 liter of pickling liquid. The dissolved preservative can be stored for weeks and used later.
