Ingredients
- 1 kg button mushrooms
- 1 onion
- 2 cloves garlic
- 100 ml olive oil
- 100 g butter
- 2 stalks spring onion
- 1 handful fresh herbs
- 500 g sourdough bread or baguette
- 100 g mixed salad
- 1 pc lemon
- 1 pinch salt
- 1 pinch pepper
- 100 ml light soy sauce
Steps
- 1Finely chop the onion and garlic, and sauté them in a little olive oil.
- 2Add the finely chopped button mushrooms and sauté until all the liquid has evaporated and they are browned in their own fat.
- 3Add the soy sauce, season with pepper, and generously sprinkle with fresh herbs (e.g., thyme, chives, spring onion, etc.).
- 4Add 50 g of butter; this will create a pleasant sauce with the soy sauce.
- 5Toast the sourdough bread slices, you can drizzle them with a little olive oil.
- 6Spoon the mushroom ragout onto the toast, sprinkle with greens, and serve with a simple olive oil and lemon juice salad.
- 7Soy sauce is quite salty, be careful with the salt. You can use any type of mushroom, even wild mushrooms!
