Preparation method
Cut the squid lengthwise in half, then score the inside with a sharp knife crosswise; this will make them curl up nicely when cooked.
Wash the lettuces and separate them into leaves.
Wash the cherry tomatoes and cut them in half.
Chef's tip
Instead of or in addition to squid, it can also be prepared with shrimp or mussels. Any vegetable and salad can be used for the side dish. If the squid is larger, cut it into more pieces so that they curl up into bite-sized pieces. You can marinate the squid with pineapple, papaya, or kiwi; these fruits soften the squid with their enzyme content, but be very careful not to overcook it.
