Ingredients
- 2 pcs aged beef steak
- 1 pc red onion
- 100 g arugula
- 8 ml balsamic vinegar
- 50 ml extra virgin olive oil
- 50 ml sunflower oil
- 50 g butter
- 300 g cherry tomatoes
- 50 g Parmesan cheese
- 1 g salt
- 1 g pepper
Steps
- 1Take the meat out one hour before cooking to bring it to room temperature.
- 2Only season with salt and pepper just before cooking.
- 3Heat a heavy pan and pour in half a deciliter of sunflower oil.
- 4When it just starts to smoke, add the meat and sear one side until browned, about 2-3 minutes.
- 5Then flip it and cook for 2 minutes, then add the butter to the pan and thoroughly baste the meat with the foaming butter. At this point, you can also add 1-2 sprigs of thyme and 1-2 cloves of garlic.
- 6Remove the meat and let it rest for 10 minutes.
- 7Meanwhile, use a vegetable peeler to make shavings from the Parmesan, cut the cherry tomatoes, and wash the arugula.
- 8Serve the sliced steak with the vegetables, drizzled with Parmesan, balsamic vinegar, and extra virgin olive oil.
- 9This side dish is perfect with other meats or as a standalone salad. If you like, you can slice a little red onion on top. The steak should be aged and at room temperature before cooking.
