INGREDIENTS
- 450 g cleaned squid
- 150 g mixed cherry tomatoes
- 1 bunch lamb's lettuce
- 1 head romaine lettuce
- 2 lemons
- 2 cloves garlic
- 1 bunch fresh parsley
- 1 bunch chives
- 1 dl extra virgin olive oil
- 1 radicchio lettuce
- Salt
- Pepper

PREPARATION
- 1Cut the squid lengthwise in half, then score the inside with a sharp knife crosswise; this will make them curl up nicely when cooked.
- 2Wash the lettuces and separate them into leaves.
- 3Wash the cherry tomatoes and cut them in half.
- 4Finely chop the parsley and garlic, season with lemon juice and salt, and make a dressing with olive oil.
- 5Pat the squid dry and pan-fry them in a hot pan for a maximum of one minute with a little olive oil, then season with salt and pepper.
- 6Serve with the salad and the Mediterranean garlic dressing.
Tip
Instead of or in addition to squid, it can also be prepared with shrimp or mussels. Any vegetable and salad can be used for the side dish. If the squid is larger, cut it into more pieces so that they curl up into bite-sized pieces. You can marinate the squid with pineapple, papaya, or kiwi; these fruits soften the squid with their enzyme content, but be very careful not to overcook it.
