INGREDIENTS
- 400 g soft goat cheese
- 50 g sugar
- 100 g hazelnuts, almonds, or cashews
- 100 g lamb's lettuce
- 2 pears
- 1 lime
- 50 ml olive oil

- Silicone baking paper
PREPARATION
- 1Bring the sugar to a boil with a tablespoon of water, then cook without stirring until you get a beautiful amber-coloured caramel. At this point, sprinkle in the seeds and immediately pour it onto a spread-out silicone baking paper.
- 2Once cooled, crush it in a mortar, but not too finely.
- 3Form balls from the goat cheese; it will be easier if you chill it well.
- 4Roll the balls in the prepared brittle.
- 5For the dressing, squeeze the lime juice, season with salt, then add 50 ml of extra virgin olive oil.
- 6Peel the pear, cut it into wedges, and toss with a few drops of lime juice.
- 7Serve the bonbons with the washed lamb's lettuce, pear wedges, and dressing.
Tip
After peeling, toss the pear with citrus juice to prevent oxidation and keep it light due to the antioxidant effect of ascorbic acid in citrus fruits. The brittle can be made with any nuts, such as walnuts, hazelnuts, cashews, macadamia nuts, or a mixture of these.
