Ingredients
- 125 g BL-55 flour
- 1 g instant yeast
- 60 g powdered sugar
- 100 ml milk
- 200 ml whipping cream for the topping
- 2 pcs farm eggs
- 50 g melted butter
- 2 g vanilla extract
- 1 g salt
- 4 g corn starch
- 200 g sour cherries
Steps
- 1The fruit ragout can be made from any fruit and stored for a long time in a clip-top jar in the refrigerator. The dough can be made with only yeast, only baking powder, or even without them. It's worth experimenting with it.
- 2Separate the eggs.
- 3Pour the dry ingredients, egg yolks, lukewarm milk, melted butter, and lukewarm cream into a bowl and mix thoroughly by hand or with a blender.
- 4Set aside in a warm place for 15 minutes.
- 5Meanwhile, boil the pitted sour cherries in a pot with two spoons of sugar and one teaspoon of starch until thickened.
- 6Turn on the waffle iron to heat up thoroughly, and brush it with oil.
- 7Whip the egg whites until stiff, and gently fold them into the waffle batter.
- 8Whip the ice-cold whipping cream with one spoon of powdered sugar and vanilla until stiff.
- 9Bake the waffles and serve them with the sour cherry ragout and whipped cream.
