Ingredients

  • 125 g BL-55 flour
  • 1 g instant yeast
  • 60 g powdered sugar
  • 100 ml milk
  • 200 ml whipping cream for the topping
  • 2 pcs farm eggs
  • 50 g melted butter
  • 2 g vanilla extract
  • 1 g salt
  • 4 g corn starch
  • 200 g sour cherries

    The fruit ragout can be made from any fruit and stored for a long time in a clip-top jar in the refrigerator. The dough can be made with only yeast, only baking powder, or even without them. It's worth experimenting with it.

    Separate the eggs.

    Pour the dry ingredients, egg yolks, lukewarm milk, melted butter, and lukewarm cream into a bowl and mix thoroughly by hand or with a blender.

    Set aside in a warm place for 15 minutes.

    Meanwhile, boil the pitted sour cherries in a pot with two spoons of sugar and one teaspoon of starch until thickened.

    Turn on the waffle iron to heat up thoroughly, and brush it with oil.

    Whip the egg whites until stiff, and gently fold them into the waffle batter.

    Whip the ice-cold whipping cream with one spoon of powdered sugar and vanilla until stiff.

    Bake the waffles and serve them with the sour cherry ragout and whipped cream.
