Ingredients

  • 1 kg button mushrooms
  • 1 onion
  • 2 cloves garlic
  • 100 ml olive oil
  • 100 g butter
  • 2 stalks spring onion
  • 1 handful fresh herbs
  • 500 g sourdough bread or baguette
  • 100 g mixed salad
  • 1 pc lemon
  • 1 pinch salt
  • 1 pinch pepper
  • 100 ml light soy sauce

    Finely chop the onion and garlic, and sauté them in a little olive oil.

    Add the finely chopped button mushrooms and sauté until all the liquid has evaporated and they are browned in their own fat.

    Add the soy sauce, season with pepper, and generously sprinkle with fresh herbs (e.g., thyme, chives, spring onion, etc.).

    Add 50 g of butter; this will create a pleasant sauce with the soy sauce.

    Toast the sourdough bread slices, you can drizzle them with a little olive oil.

    Spoon the mushroom ragout onto the toast, sprinkle with greens, and serve with a simple olive oil and lemon juice salad.

    Soy sauce is quite salty, be careful with the salt. You can use any type of mushroom, even wild mushrooms!
