Finely chop the red onion, grate the garlic, and mix them with the other ingredients, excluding the salt. Toss in the chicken breast cut into desired pieces and refrigerate for a few hours.
If there's no time to marinate, you can cook it immediately. Just before cooking, salt the marinated meat, then cook it on a hot grill pan or in a skillet, turning frequently.
Serve sprinkled with chopped coriander to taste, with fresh salad and couscous.
