Description
Also known as celery stalk, stick celery, pale celery or bleached celery. It is a biennial herbaceous plant native to the Mediterranean region and has been cultivated for more than three thousand years, a member of the Umbelliferae family, which also includes carrots, parsley, fennel, dill and anise. It was first recorded as a food plant in France in 1623.

Usage
Can be used raw in salads. It flavours stews, sauces, meat and egg dishes well, but it can also play an important role in diet catering. Cook the diced celery with onion or apple, potatoes and cream, and puree it into a soup.
