Ingredients

  • 2 pcs salmon fillet
  • 1 tsp. salt
  • 1 pc sweet potato
  • 1 pc carrot
  • 1 pc spring onion
  • 50 g green peas
  • 20 ml olive oil
  • 1 pc parchment paper
  • 100 g salad
  • 1 pc avocado
  • 100 g tomato
  • 10 g sprouts

    Lay out a piece of parchment paper.

    Slice the sweet potato and carrot thinly, and cut the spring onion lengthwise into strips. Pile these vegetables and the green peas (with their pods) onto one half of the parchment paper. Drizzle lightly with olive oil and season with a pinch of salt.

    Season both sides of the salmon fillet with salt, then place it on top of the vegetables.

    Fold the other half of the parchment paper over the prepared vegetables and fish, then fold and crimp the edges all around to form a semi-circular packet.

    Bake in a preheated oven at 200 degrees Celsius for 20-25 minutes until cooked through.

    Serve the cooked fish and vegetables with a fresh salad.
