INGREDIENTS
- 20 dkg shrimp tails
- 2 tbsp olive oil
- 3 cloves garlic
- 1 large red onion
- 2 tbsp finely chopped fresh ginger
- 1-2 tbsp curry paste
- 1 can coconut cream
FOR SERVING
- Rice
- Lime
- Coriander
PREPARATION
- 1Heat 1 tbsp olive oil in a pan and fry the shrimp over medium-high heat for a few minutes. Set aside.
- 2Finely chop the garlic, red onion, and ginger.
- 3Sauté the onions and ginger in 1 tbsp olive oil, then add 1-2 tbsp (to taste) curry paste and one can of coconut cream. Cook for a few minutes, then stir in the shrimp.
- 4Serve with cooked rice, lime, and fresh coriander leaves.
