INGREDIENTS
- 1 package tortilla wraps
- 1 avocado
- 1-2 roasted chicken thighs
- 1 small red onion
- ½ cucumber
- A few cherry tomatoes
For the Hummus Dressing
- 3 tbsp. hummus
- ¼ lemon juice
- Cilantro leaves for serving
- Parsley leaves for serving
PREPARATION
- 1Cook the tortillas in a dry pan over medium heat according to the instructions on the package, then cover with a kitchen towel to keep warm until serving.
- 2Peel the avocado and mash its flesh with a fork.
- 3Dice all ingredients.
- 4Prepare the dressing: mix lemon juice and enough water (approx. 1-2 tbsp) with the hummus until it reaches a dressing-like consistency.
- 5Spread the folded tortillas with avocado, add the diced ingredients, and drizzle with the dressing. Serve sprinkled with parsley leaves or cilantro.
