  • 1 package tortilla wraps
  • 1 avocado
  • 1-2 roasted chicken thighs
  • 1 small red onion
  • ½ cucumber
  • A few cherry tomatoes

For the Hummus Dressing

  • 3 tbsp. hummus
  • ¼ lemon juice
  • Cilantro leaves for serving
  • Parsley leaves for serving

PREPARATION

    Cook the tortillas in a dry pan over medium heat according to the instructions on the package, then cover with a kitchen towel to keep warm until serving.

    Peel the avocado and mash its flesh with a fork.

    Dice all ingredients.

    Prepare the dressing: mix lemon juice and enough water (approx. 1-2 tbsp) with the hummus until it reaches a dressing-like consistency.

    Spread the folded tortillas with avocado, add the diced ingredients, and drizzle with the dressing. Serve sprinkled with parsley leaves or cilantro.
