Ingredients
- 600 ml milk
- 400 ml cream
- 10 pcs egg
- 1 pc vanilla pod
- 150 g sugar
- 6 g salt
Steps
- 1Separate the eggs and mix the yolks with the sugar and the scraped seeds of the vanilla bean.
- 2Whip the egg whites with a pinch of salt and a pinch of sugar until stiff.
- 3Bring the milk to a boil, then remove from heat. Using two spoons, form dumplings from the egg whites, then cook them covered over low heat for 10 minutes.
- 4Strain the milk and add the cream, also add the scraped vanilla pod. Bring to a boil.
- 5Thoroughly mix the egg and sugar mixture, then gradually add the hot milk while continuously stirring.
- 6Return to the heat and gently warm continuously until it begins to thicken, then remove from heat and cool immediately.
- 7Serve with the meringue dumplings.
