Ingredients

  • 600 ml milk
  • 400 ml cream
  • 10 pcs egg
  • 1 pc vanilla pod
  • 150 g sugar
  • 6 g salt

    Separate the eggs and mix the yolks with the sugar and the scraped seeds of the vanilla bean.

    Whip the egg whites with a pinch of salt and a pinch of sugar until stiff.

    Bring the milk to a boil, then remove from heat. Using two spoons, form dumplings from the egg whites, then cook them covered over low heat for 10 minutes.

    Strain the milk and add the cream, also add the scraped vanilla pod. Bring to a boil.

    Thoroughly mix the egg and sugar mixture, then gradually add the hot milk while continuously stirring.

    Return to the heat and gently warm continuously until it begins to thicken, then remove from heat and cool immediately.

    Serve with the meringue dumplings.
