A perennial plant with light green leaves and a lemony scent. It is excellent for flavouring and decorating salads, sauces, fillings, fruit soups and salads, mushroom, fish, poultry and game dishes, vinegars and desserts. (In 2015, lemon balm ice cream won the ice cream of the year award.)
