Use
- Baking: cakes with edible starch are particularly light and crumbly. Mix the edible starch thoroughly with the flour and sift. To improve the quality of cakes, omelettes, noodles, strudels, sponge cakes and baking powder doughs, replace ¼-½ of the flour quantity specified in the recipe with edible starch.
- Cooking: thickening with edible starch is quick and easy. The thickening is not made with roux, so less fat gets into the food. Mix the edible starch with a little cold liquid (water, soup) until smooth and add to the hot food while stirring constantly, then bring to a boil once.
