Carmenere is a grape variety that requires the right climate for good ripening. The colder part of the Colchagua Valley can indeed give the wine a special character. Cold breezes can help preserve the freshness and complexity of the grapes, while highlighting the characteristic aromas of the variety. Thorough preparation of the grapes, such as washing and drying, helps to obtain the best quality fruit. Fermentation at low temperatures and pumping over three times a day greatly assist in extracting the fruit aromas, which is particularly important for Carmenere. The fact that fermentation takes place in barrels contributes to the wine's complexity and texture. Barrel aging can also help soften the wine's taste and add new flavors. The intense deep purple color, ripe red fruits, caramel, and characteristic soft pepper aromas create an excellent combination. The use of French oak barrels helps enhance the wine's complexity, and the spicy notes of the oak beautifully complement the fruity flavors.
