The name refers to the processing method developed by Bányai Specialty Coffee Concept in 2018 and perfected year by year. During the process, ripe coffee fruits are peeled without water using the black honey method, then placed in a pressure-resistant food-grade steel tank, where the controlled fermentation preserves a lot of flavor from the fruit in the beans.
