Butter Chicken Curry Sauce

A tomato and butter based sauce with fenugreek and green cardamom.

Cooking Instructions

Serves 4, cooks in 20 minutes.

Ingredients: 400g chickpeas and 2 sweet potatoes OR 450g chicken.

Method:

1. Dice the meat or vegetables and fry until browned (approx. 5 minutes).
2. Add the sauce and simmer until cooked through (approx. 15 minutes).
3. Serve with rice or naan bread. You can also add spinach before serving.

About the Producer

The brand was founded by Indian-born L.G. Pathak. When his father died, the family moved to Kenya in search of a better life, which they found: they opened a shop selling Indian sweets to other expat families who missed the tastes of home.

In 1956, the family moved to the UK. L.G. struggled to find work, so his wife Shanta came up with the idea of recreating their Kenyan business in London. The delicacies she made in her tiny kitchen soon became popular, and there were soon queues of people outside their front door.

A few years later, they opened an Indian grocery store, but the real turning point came when the Pathaks (they had dropped the ‘h’ from their name by this time) accidentally ordered too many vegetables. L.G. decided to make pickles from the surplus. Preserved in oil with freshly ground spices, the vegetables captured the authentic flavours of India.

The brand was taken over by their son, Kirit. His wife Meena came up with the idea of creating sauces that would make it quick and easy for people to cook curries at home, without having to blend their own spices. As they say, the rest is history.

Storage

Store in a cool, dry place. Once opened, use immediately.
