Ingredients
- 1 pc egg
- 1 pc egg white
- 100 g vanilla skyr
- 30 g oat flour
- 1 pinch salt
- 10 g sweetener
- a few drops vanilla stevia drops (optional)
- 100 g blueberries
Steps
- 1In a bowl, mix the egg, egg white, skyr, and sweetener.
- 2Add the oat flour and a pinch of salt, then mix until smooth.
- 3Fold in a handful of blueberries.
- 4Heat a non-stick pancake pan (use very little oil if necessary).
- 5Spoon the batter into the pan and cook the pancakes for 2–3 minutes per side, until golden brown.
