- 1 pc egg
- 50 g skyr (or low-fat Greek yogurt)
- 50 ml almond drink or milk
- 30 g whole wheat flour or oat flour
- 1 pinch salt
- 1 g vanilla to taste
- 10 g sweetener to taste
- 5 g butter or coconut oil for frying
Separate the egg. Mix the yolk with the skyr yogurt, milk, flour, salt, vanilla, and sweetener until smooth. Whip the egg white until stiff peaks form, then gently fold it into the mixture to get a light, airy batter.
Heat the fat of your choice in a pan, then pour in the batter and fry both sides over medium heat until golden brown. Once cooked, tear it into pieces with two spatulas and serve hot.
Top with fresh raspberries, chia seed raspberry jam, or a little powdered sweetener/sugar.
