Preparation method
Boil the potatoes in their skins, then peel them while still hot, and press them through a potato ricer. Once cooled to lukewarm, mix them with the flour, 1 tablespoon of butter, the egg, and a pinch of salt until you get a smooth dough.
Roll out the dough to half an inch thick and cut it into 14 squares. Wash and dry the plums, pit them, and place a sugar cube into the cavity of each plum.
Bring a large pot of lightly salted water to a boil. Place the plums in the center of the dough squares, pinch the corners together, then, with floured hands, shape the dumplings into balls. Cook them in boiling water for approximately 15 minutes.
