INGREDIENTS
- 25 g butter
- 10 dkg sugar
- 2 tsp instant coffee
- 1 pinch of salt
- Cocoa powder
- 20 dkg dark chocolate
- 6 pcs egg yolks and 7 pcs egg whites
- 2 tbsp cream
PREPARATION
- 1Grease 6 soufflé molds with butter, then sprinkle with cocoa powder. Run your finger along the rim of the mold, this will help the soufflé rise more beautifully.
- 2Melt the chocolate over a double boiler, then let it cool slightly.
- 3Beat the egg yolks with sugar and a pinch of salt until pale, then add the melted chocolate, instant coffee, and cream, and mix until smooth.
- 4Whip the egg whites into a stiff foam, then gently fold them into the chocolate mixture in 2-3 batches.
- 5Spoon the mixture into the molds and bake in a 180-degree oven for 15-17 minutes.
- 6Serve immediately, as it collapses quickly – but that's its charm!
