  • 25 g butter
  • 10 dkg sugar
  • 2 tsp instant coffee
  • 1 pinch of salt
  • Cocoa powder
  • 20 dkg dark chocolate
  • 6 pcs egg yolks and 7 pcs egg whites
  • 2 tbsp cream

PREPARATION

    Grease 6 soufflé molds with butter, then sprinkle with cocoa powder. Run your finger along the rim of the mold, this will help the soufflé rise more beautifully.

    Melt the chocolate over a double boiler, then let it cool slightly.

    Beat the egg yolks with sugar and a pinch of salt until pale, then add the melted chocolate, instant coffee, and cream, and mix until smooth.

    Whip the egg whites into a stiff foam, then gently fold them into the chocolate mixture in 2-3 batches.

    Spoon the mixture into the molds and bake in a 180-degree oven for 15-17 minutes.
