INGREDIENTS

  • 20 dkg shrimp tails
  • 2 tbsp olive oil
  • 3 cloves garlic
  • 1 large red onion
  • 2 tbsp finely chopped fresh ginger
  • 1-2 tbsp curry paste
  • 1 can coconut cream

FOR SERVING

  • Rice
  • Lime
  • Coriander

PREPARATION

    Heat 1 tbsp olive oil in a pan and fry the shrimp over medium-high heat for a few minutes. Set aside.

    Finely chop the garlic, red onion, and ginger.

    Sauté the onions and ginger in 1 tbsp olive oil, then add 1-2 tbsp (to taste) curry paste and one can of coconut cream. Cook for a few minutes, then stir in the shrimp.

    Serve with cooked rice, lime, and fresh coriander leaves.
