Ingredients

  • 1.5 kg apple
  • 500 g all-purpose flour
  • 40 g sugar
  • 1 g salt
  • 5 g ground cinnamon
  • 6 g baking powder
  • 5 ml vanilla extract
  • 120 g fat
  • 2 pcs egg
  • 90 g 20% sour cream
  • 240 g breadcrumbs
  • 30 ml milk

Steps

  • 1
Grate the apples on a large-holed cheese grater, squeeze out their juice, then mix the apples with sugar and cinnamon.
  • 2
Mix the flour with salt, baking powder, and sugar, then add the fat, eggs, sour cream, and vanilla extract. Work the dough thoroughly, then divide it into two parts.
  • 3
Roll out one part of the dough on a floured board to a thickness of 3-4 mm, press it into the baking pan, pile the sugary, cinnamon apples on top, then roll out the other part of the dough and cover the apple filling with it. Join the edges and cut off any excess dough!
  • 4
Prick the top with a fork, brush with sour cream, and bake in a preheated oven at 170 degrees Celsius, on a convection setting, for 25-30 minutes until done. Baking time may vary per oven; perform a skewer test. After removing it from the oven, brush it with 2-3 tablespoons of milk.
