Ingredients

  • 3 tablespoons olive oil
  • 1 red onion
  • 2 cloves garlic
  • 1 can chopped tomatoes
  • 400 g tomatoes on the vine
  • 250 g dry pasta
  • 1 handful basil
  • 1 handful arugula
  • 100 g goat cheese
 

Steps

    Dice the onion finely, sauté it in olive oil, then add the finely chopped garlic. Add the canned chopped tomatoes and the diced tomatoes, and season with salt. Cook covered over medium heat for about 20 minutes until tender.

    Once tender, pour in 200 ml of water. Add the dry pasta and basil, and cook covered until tender. Stir a few times during cooking, adding a little more water if necessary.

    When the pasta is tender, add arugula and serve hot with goat cheese.
