INGREDIENTS
- 4 egg yolks
- 80 g powdered sugar
- 40 g flour
- 300 ml milk
- 100 ml brewed coffee
- 400 ml whipping cream
- 200 g ladyfingers
- 1 tablespoon Dutch cocoa powder - unsweetened
PREPARATION
- 1Add the powdered sugar, flour, and 200 ml of milk to the egg yolks and mix until lump-free with a hand whisk, then pour in the remaining milk and coffee and mix thoroughly.
- 2Start heating it over medium heat and bring to a boil while stirring constantly, then remove from the stove and let it cool. It is important to cool it thoroughly, because if you mix it with the whipped cream while warm, it will run.
- 3Once the coffee cream has cooled, whip the cream until stiff, then fold in the cream in 2-3 batches.
- 4Place a few spoonfuls of the coffee mixture at the bottom of a dish, smooth it out, then arrange the first layer of ladyfingers, followed by more cream, ladyfingers, and finally the remaining cream on top.
- 5Sprinkle the top with unsweetened cocoa powder and refrigerate.
- 6It's best to prepare it in the evening and let it rest overnight, but if absolutely necessary, a few hours of chilling will suffice.
