Tomato Bagel
30 g Philadelphia Light
10 x cherry tomatoes, mixed colours
1 teaspoon olive oil
ground black pepper
1-2 sprigs fresh mint leaves, optional
1 x wholemeal bagel
1 x handful baby leaf salad, for serving
1 teaspoon olive oil, for serving
0.25 x fresh lemon, for serving
Preparation
1. Halve the cherry tomatoes and place them in a small bowl. Drizzle with 1 teaspoon of olive oil, season to taste, then set aside until use.
2. Halve the bagel and spread both sides with Philadelphia. Then, place the dressed cherry tomatoes on top, season with black pepper and a little chopped mint. Serve immediately with a side salad, drizzled with a teaspoon of olive oil and a squeeze of fresh lemon.
