Parmigiano-Reggiano is produced exclusively in the provinces of Parma, Reggio Emilia, Modena, and parts of the provinces of Mantua and Bologna, on the plains, hills and mountains between the Po and Reno rivers. In this area, there are four thousand farms where the cattle are fed with locally grown feed. The feeding of the cattle complies with strict regulations that prohibit the use of silage and fermented feed.
The deep roots in the protected and respected environment are the origin of the unique characteristics that distinguish the “king of cheeses”.
